Is it easy to make at home?
Absolutely. All you need is cabbage, salt, and patience. For the best results, use fresh cabbage and consider a quality fermentation kit.

How to Make Sauerkraut

You’ll need:

  • Fresh cabbage (with tight, crisp leaves)
  • Salt (1 tablespoon per medium cabbage)

Optional additions: grated carrots, herbs like dill, or spices such as caraway seeds for extra flavour.

Steps:

  1. Shred the cabbage using a sharp knife or mandoline.
  2. Sprinkle with salt and massage it for a few minutes to release liquid.
  3. Pack the cabbage tightly into a jar, ensuring it’s completely submerged in its brine. Add a little water if needed to cover.
  4. If you’re adding extras like carrots or herbs, layer them in as you pack the jar.
  5. Cover the jar with a cloth or a loose lid to allow airflow.
  6. Leave the jar to ferment at room temperature for 3–7 days, depending on your taste preference. Check daily and skim off any surface scum.
  7. Once it’s reached your desired tanginess, transfer the jar to the fridge to halt the fermentation process.

Homemade sauerkraut can last for weeks in the fridge, but in my house, it rarely stays untouched for that long.

Love Italian? Adore Mexican? Barrel n Vine Nails the Fusion!

I WASN’T sure what to expect for my first Fusion event at Barrel n Vine in Hervey Bay, but I quickly learned to expect the unexpected!

After thoroughly enjoying their Taste of Italy wine tasting last month, I was curious to see what their Italy Meets Mexico Fusion night had in store. Apparently, this dining style—where cuisines from different cultures are combined—is becoming quite popular across south-east Queensland. One guest even mentioned spotting a similar event advertised in Maroochydore.

The evening promised a three-course meal blending Italian and Mexican flavours, with two options for each course. I kicked things off with the Italian herb-battered gamberi (prawns) served with a Mexican chipotle aioli (feature photo above). Light, crispy, and perfectly seasoned—it was the best of both worlds. For my main, I couldn’t resist the chorizo and gamberi pizza tostada. It was nothing like the pizzas I’m used to. This version featured a delicious mix of chorizo, prawns, and green salsa

encased in a crunchy tostada instead of the usual dough. Delicious.

Dessert was the star of the evening for me. I went for the Patron tequila panna cotta with a mango chilli fresh fruit salsa. I’ve always been a fan of panna cotta, but this one was next-level. The hint of chilli in the salsa added an unexpected but delightful kick. Who knew chilli and panna cotta could pair so well?

For drinks, I started with their lime and jalapeño soft drink—zesty, refreshing, and with just enough of a spicy twist. Later, I tried the 2024 Our Mums Love Barossa Rosé, recommended by co-owner Rachael Nocera. It was crisp, light, and a perfect complement to the meal. I also noticed other guests enjoying vibrant cocktails, with the Mediterranean Margarita being especially popular.

A Warm and Welcoming Vibe at Italy Meets Mexico Fusion

Walking into Barrel n Vine that evening, I was reminded of why this place is so special. Rachael and her husband, Joe, the talented duo behind the restaurant, have created something irresistibly charming. With a wealth of experience from their previous successful ventures at Sandstone Point near Bribie Island and Sydney, they bring passion and precision to every detail.

The modern, elegant interior adds to the charm. Black dining tables and chairs create a sleek backdrop, while the vintage black-and-white photographs on the walls whisk you away to Europe. My favourites were a striking image of a Venetian canal and another capturing the homely bustle of an Italian kitchen.

As the night unfolded, the atmosphere was simply perfect. Happy conversations, the clinking of glasses, and the soft glow of candlelight created a welcoming vibe.

What stands out at Barrel n Vine is their attention to detail. From the beautifully plated dishes to the warm and attentive service, it’s clear that Joe and Rachael are dedicated to creating memorable dining experiences. Their family’s Italian heritage shines through, and their openness to fusion flavours adds an exciting twist. The Italy Meets Mexico Fusion event perfectly showcased this, with each dish seamlessly blending the best of both worlds.

By the end of the night, I was already thinking about my next visit. Barrel n Vine has quickly become one of my favourite spots in Hervey Bay—not just for the food, but for the welcoming atmosphere that makes every meal feel like a celebration. If you’re looking for unique dining experiences that bring two cuisines together, I highly recommend Barrel n Vine’s Fusion events. Sip, Savour, and Socialise at Barrel n Vine’s Events

RACHAEL NOCERA and her husband, Joe, were searching for balance with their newest restaurant, and that’s precisely what they discovered in Hervey Bay. Barrel n Vine on the esplanade at Torquay struck the middle ground between their former restaurants at Sandstone Point near Bribie Island and Sydney. Bribie was perfect for those who appreciated a slower pace and a strong sense of community. The island’s quiet vibe was matched by its friendly residents, who greeted each other by name and valued the island’s slower, more intimate way of life, unlike Sydney. The bustling and cosmopolitan city was vibrant, with people commuting, socialising, and enjoying weekends by the harbour or in parks.

“We wanted to bring our little daughter to experience a childhood like we had, and we felt like we found that in Hervey Bay,” Rachael says. “It’s a slower pace than Sydney but faster than Bribie Island. We’ve found the right balance for us now.”

Hervey Bay has a relaxed, small-town feel, yet there is always a lively undercurrent of activity, especially during the whale-watching season or when tourists come for the pristine beaches and easy access to K’gari (Fraser Island). The air is vibrant, thanks to a growing array of dining spots such as Barrel n Vine, cultural events and shopping options. Hervey Bay’s foreshore parks and walking tracks create a social hub, bringing together locals and visitors in a shared love for the outdoors. Cheers to Italy: A Memorable Evening of Wine & Food Pairings

Upon arrival at Barrel n Vine for their second wine-tasting event, A Taste of Italy, it felt like stepping into a scene from a charming Italian villa. The tables were beautifully laid out for the 52 guests, each set with five wine glasses for each person, ready to be filled with delightful selections. Information sheets detailed the wines we’d be tasting, the regions they hailed from, and the brands. To top it off, the canapés selected and crafted by Joe, the head chef and co-owner, were spectacular. One standout was the Occeli Tesum AI Barolo Cheese, which had taken nine weeks to arrive—a testament to their commitment to quality. This cheese was perfectly paired with a Barolo wine from the Balbi Soprani brand, which hails from the Piedmont region.

As the event began, Rachael introduced the art of wine tasting, urging everyone to remember four simple words: see, swirl, sip, and score. She explains, “Sip first and taste the food, then sip again, and notice how much the food changes the taste of the wine.” This approach transformed the evening into an interactive experience rather than just a tasting.

A television screen on the wall showed the featured wine-making regions and the families that produced them, bringing an element of authenticity to the event.

“These are not mass-produced wines. They’re made by real people; it’s their life,” she shared.

The Prosecco from Veneto surprised many, becoming softer and less crisp with each bite. The ultra-light Pinot Grigio from Sicily, paired with pork belly bites, brought an almost meaty flavour to the forefront. But add a cranberry, and it transforms into something different. The prawn and crab ravioli served with Chardonnay from the Abruzzo region lifted the wine’s flavour, making for a delightful pairing.

One guest, Jan Scott, was particularly impressed by the Sangiovese from the Puglia region, describing it as “Christmas in my mouth!” Its intense berry flavours resembled a port and paired wonderfully with the Sagyu Ragu Arancini. And yes, that Occeli Tesum AI Barolo Cheese was worth the nine-week wait! It accompanied the Barolo, a lighter red than the Sangiovese, which was ideal for sharing with friends.

As A Taste of Italy drew to a close, the hosts served a sixth wine—Limoncello from the Portofino region—alongside a delicious Panna Cotta with Raspberry Compote. It was a fitting end to a memorable night of exquisite wines and delightful pairings, perfectly capturing the spirit of Italian dining and the warmth of community that Barrel n Vine embodies.

A Family Affair: Building a Community at Barrel n Vine

A Taste of Italy was the second in a series of wine and food pairing events in the private room upstairs at Barrel n Vine. The recently renovated space boasts classy chairs in a deep blue-green colour—Rachael’s favourite—that perfectly complement the vintage (or should I say, chic?) décor, echoing the inviting vibe of the main restaurant area below.

Rachael said their first event was Shanks and Shiraz, featuring only Australian Shiraz, but the sky is the limit for future themes. “This time, we took a deep dive into Italian wines, but we have a lot of ideas for more events—not just with wines, but also with whiskies and gins.”

In their quest for excellence, Rachael and Joe believe they’ve struck a perfect balance with their staff, too. Joe highlights their teamwork: “We have other chefs who help us in the kitchen, but in terms of the recipes, the plates, and the ideas, that’s Rachael and me.”

Joining Rachael and Joe in the Barrel n Vine family is their nine-year-old daughter, Stella, as well as Rachael’s parents, Karl and Lorraine (affectionately known as Luvvy). “Mum likes people to call her Luvvy,” Rachael says with a smile. “They’re such a huge help; we can count on them. And they just love to be a part of it, so it’s a win-win.”

The team is rounded out by 15 dedicated staff members. “We have a balance of male and female staff who feel like family,” Rachael explains. “That’s our philosophy. Our staff are our extended family. We try to bring in a few of the young ones who haven’t worked before and teach them the ropes. It’s a nice balance of males and females, and it brings harmony.”

With such a supportive and collaborative atmosphere, it’s no wonder Barrel n Vine is becoming a go-to destination for those looking to explore exceptional wines paired with delicious food and enjoy the warmth of a close-knit community.

WHEN McGuigan Wines invited me to try their new Gold Label range, I was eager to see what they had crafted for an at-home premium experience.

With over a century of winemaking expertise, McGuigan is synonymous with quality and innovation. Their new range, which includes a Red Blend, a Shiraz, and a Merlot, promised to elevate golden moments, and I was curious to see how these wines would deliver on that promise.

I gathered two friends and fellow wine enthusiasts, Noel and Christine Gorrie, to review the range with me. We wanted to share our honest impressions while keeping things casual and enjoyable.

Merlot: Soft, Smooth, and Mellow

McGuigan Gold Label Merlot

We started with the McGuigan Gold Label Merlot. According to McGuigan, this wine offers “luscious plum-like flavours balanced with a smooth mellow finish,” and we were eager to see if it lived up to that description.

Noel, a seasoned wine drinker with a soft spot for Merlot, noted, “I like a Merlot. This one was fairly smooth. I enjoy wines that don’t have that sharp bite, and this one fits the bill. The thing with wines, though, is that they change. Every bottle, every vintage, every year can taste different, even when they come from the same vines. This one’s definitely enjoyable.”

Christine had a slightly different perspective. “When I first tasted it, I thought it could use a bit more ageing. It seemed a little young, but after letting it sit for a few minutes, it opened nicely on my palate. It became a lot smoother.”

As for me, I found it to be smooth, which is a quality I appreciate in red wine. A lot of reds tend to be too heavy for my taste, but this Merlot struck a nice balance. I’ve been on a quest to find red wines that I truly enjoy, and this one was a pleasant surprise. It didn’t overwhelm me, which is often the case with heavier reds.

Shiraz: Rich, Mocha-Infused Goodness

McGuigan Gold Label ShirazNext, we tried the McGuigan Gold Label Shiraz, a medium-bodied wine described as having “lush forest berries, rich mocha notes, and subtle spice.” We were all keen to see how this one compared to the Merlot.

Noel remarked, “This Shiraz feels a little lighter than the Merlot. I don’t usually worry too much about pairing wines with food. If I like a wine, I drink it—it doesn’t really matter what I’m eating. But this one has a nice balance. I’d be happy drinking it on its own.”

Christine, however, was more focused on food pairing. “I could definitely pair this one with steak, or maybe a hearty winter stew. I also like Shiraz with chicken. I know some people prefer white wine with chicken, but I think this one would go nicely. I really enjoyed it—probably my favourite so far.”

For me, the Shiraz was lighter and more approachable than the Merlot. I’ve always preferred wines that don’t weigh me down, and this one had a lovely mix of berry flavours with just enough mocha and spice to keep it interesting. I’d probably reach for the Shiraz over the Merlot if I had to choose.

Red Blend: A Bold Finish

McGuigan Gold Label RedFinally, we sampled the McGuigan Gold Label Red Blend. This wine is described as “bursting with flavours of ripe blackberry and cherry, with hints of spice and a chocolatey finish.” It sounded like it would be a bit bolder than the other two, and we were curious to see if it lived up to expectations.

Noel was quick to notice the spice. “This one’s got more of a peppery taste to it. I could taste the spice straight away. I think I prefer it over the Merlot, but it’s a close call.”

Christine, on the other hand, leaned towards the Shiraz as her favourite. “I liked this one, but I think the Shiraz edged it out for me. The Red Blend has a lot going on—there’s a depth to it that I appreciate, but it’s a bit more robust than I usually go for.”

As for me, I agreed with Noel. The spice really came through, which added a nice complexity to the wine. The blackberry and cherry flavours were prominent, and the chocolatey finish tied everything together beautifully. However, my favourite was still the Shiraz—it had just the right balance of flavours for my taste.
